Shrimp alfredo with zucchini noodles

So I had this crazy contraption I bought on a whim, but never had a reason to use so it sat....and sat... and sat some more. It was a veggie spiralizer. So when I saw the recipe for Shrimp Alfredo with Zucchini noodles I couldn't resist.







Here is the recipe:


And here is our adventure:

First I spiralized the zucchini. Four Zucchini and one band-aid later I got this



Then I opened a pack of already prepared shrimp. I just needed to remove the tail

I cooked them on up in the skillet with butter then transferred them to a plate with a paper towel on it to soak up the juices

Afterwards I sauted the noodles and then added the shrimp and Alfredo.  Then served it in a bowl with parmesan cheese


It is a very simple recipe and took only minutes to make.

Girls rating: 2/3 were afraid to even try it. I try to push them to try new things but sometimes they just don't give. The one that did try it loved it
My rating: I absolutely loved it. I immediately added it to my recipe book to make again in the near future. The noodles tasted great with the shrimp. The best part is the feeling of being able to eat it without feeling as bad about what I'm eating. 

For those wondering, my two daughters that didn't want to eat the zucchini noodles.. they had regular pasta and ate several bowls of that so they weren't forced to eat what I made

Gotta love some curry

Some people know I really love curry. I have tried many kinds of curry and have made many recipes. I tried a new book that I recently bought that has Keto friendly recipes. That diet I was doing worked really well so I'm trying to stick with it the best I cant but sometimes I slip.

Here is the recipe for the Coconut-Curry Chicken :


And here is our adventure:

First I added the coconut oil , onions, and red peppers

I added the chicken then I seasoned all of it with the curry , salt, and pepper.  I also added sweet paprika as a personal touch


After letting it boil and cook for a few minutes my daughters added the coconut milk and the lime juice


After cooking it for about 12 mins I added the red cabbage and cooked for two more minutes... I couldnt get that picture to load up. Use your imagination

I was too excited to take a picture of the finished product. I served it over some Basmati rice that I added alittle butter to.

Girls rating: 3/3 .. they loved it so much that two of them had two bowls each and ate every last bit
My rating: I absolutely loved it. Definitely will make this again

Diet almost over

My diet that I've been working on is almost over. I dont have any meal plan pre made food pictures this time. I did however have to overcome a big obstacle in the diet.


We celebrated a birthday party for two of my children this precious weekend and the obstacle was what to do about cake. Luckily the ever wonderful google had some answers. To help my sister and I stay on track with the diet while not being outcasts at the birthday party, I made a low card/zero sugar cake. 

This was the result :

 the crumbs on top are blended up pecans. It's a vanilla cake with cream cheese icing.

As you can see it's a fairly easy cake to make. And it's very yummy

I loved making this cake and eating it too haha. I was making it last minute so I didnt split it into three layers as the recipe suggests but it still came out great.  

Definitely making that again in the future.

Another week on the Diet

Through this diet I've finally learned some control over the foods I eat. I have learned a few tricks so you can still have your habits without any guilt involved. Coffee tips for a healthier cup

Cauliflower potato salad

Here is a neat little recipe that follows my new diet plan and anyone can make it with only a few ingredients :


I doubled all the ingredients to provide enough for my family as well. And instead of using my bags of cauliflower, I just used a whole head of cauliflower from the store that I steamed myself.

Here was my finished product


It tasted absolutely amazing and I highly recommend it whether you are on a diet or not.

Personal Trainer food

So its almost the end of my first week of my new diet. I wanted to take this time to share some of the yummy food that I've gotten to eat from Personal Trainer Food.  It is some really good food and the diet is easy to follow with very small limitations when it comes to food you cant have.

*Note: I didn't take pictures of all of my food because mainly I forgot most of the time*
Here is my adventure:

I tried to mix things up so I can show you a big variety like this Chicken and mixed veggies

and this chicken patty and a different blend of veggies

This was a turkey burger and I had some greenbeans. As you see I realized half way through eating that I forgot to take a picture haha

And here is an example of the breakfast they give you. Each morning I have some kind of different omelette and sausage 


There are other kinds of food I've had but didn't take a picture of such as the Zesty Chicken tenders I had last night and there are some other meals I haven't had yet like the sausage meals and the ribs.

The plan I am doing is a 28 day plan and it normally cost about $500 for 28 days worth of Breakfast, lunch, and dinner.

The food is amazing and I can feel the difference alittle already. I haven't checked my weight or anything yet but I just feel alittle better and It's making me proud of myself for sticking to the plan so far. I felt like crap the first couple days due to the lack of sugar but I'm getting over that and I imagine I'll be feeling even better next week. 

I'm off to do some walking. The only excercise recommended for the diet is walk about 20 mins a day. I like that already compared to most diets I hear that required intense cardio or weight training to see results.

I love this food. its all so good and I look forward to trying them all. Also I'm not limited to just the food they send me. I can go out to eat at restaurants and stuff too I just have certain guidelines to follow for what to eat.

New diet plan

Starting today Ill be following a new diet plan thanks to Tryazon and Personal Trainer Food. I decided to blog about it since almost all my blogs are about food anyway haha.

I'll be posting pics of the food I'll be able to eat. There aren't many restrictions for food other than don't eat sugar.

Today I  am doing a 24 hour liquid fast. So today is just water, flavored water, and broth.

Starting tomorrow Ill be eating the food I got from personal trainer food.

I hope you all enjoy me on my adventure through the next 28 days.

Spinach tomato tortellini

A few weeks ago the children and I chose another recipe and made it. The recipe was spinach tomato tortellini. The recipe is from Allrecipes.com.

I apologize for the late post about it but its here now.


Here is our adventure:

First we brought the water to bowl and added the yummy noodley goodness

my oldest chopped up the spinach

and added it to the ...

tomatoes

..more tomatoes...


...we used garlic powder because I forgot to get garlic..

...basil...

...salt and pepper

In a mixing bowl my two youngest  added flour...

....milk....


... and I added the heavy cream because there wasn't much room for error and added that to the mixture we made in with the other ingredients

Afterwards I drained the tortellini , I added it to the mixture and got this amazing masterpiece

It was a very, very simple recipe and a lot of fun too

The Girls: 3/3 Loved it and had fun making it. They ate it up and didn't leave much left for anyone else
My rating: I love this recipe. Its so good and I definitely will be making it again.

Ill be trying to make more recipes as the children and I have time and Ill add them to my blog as I make them. I hope you enjoy!!!

I'm back and I brought porkchops

I stopped the blog about a year ago because the girls were starting to get bored with helping me cook. I didn't stop cooking but I stopped taking pictures and blogging because it wasn't the same without the girls cooking with me. Lately they've been getting back into the idea and picking out recipes so I decided to give the blog another shot. Our special Guest for this one (and many future blogs to come) is my girlfriend Hannah.

My two oldest both chose recipes that looked so amazing that I couldn't choose just one. The recipes are :

Butternut squash & Rosemary soup

I know it might be hard to read so here is a link to a website with the recipe (its alittle different but overall the same). Mine was from the pioneer woman cookbook . Pork Chop wine wine and roasted garlic


So that was the recipes...

Here is our adventure:

Lets start with the soup.My oldest trying her best to cut up the squash

I cut up the onions\
covered the squash in oil and added rosemary. Thrown in the oven for 45 mins. Meanwhile....
My oldest adding the red lentils to the pan followed by water and bringing to a boil. Let boil for 10 mins.

After straining the lentils we pour them into a pot along with onions and broth
Didn't get pic while it was on the stove but we let it sit on the stove in low heat while Hannah and my youngest make the pork chops

Now the pork chops:

(not pictured) we used minced garlic and roasted it for a few minutes.


after cooking the pork chops for a couple minutes in the skillet then pull them out. Add oil, butter, and then the roasted garlic



add the red wine (we used a concord we really like)

then add bay leaves


after the mixture reduces half way my oldest added the broth



My two youngest then placed the porkchops into the wine mixture

cook them up until done

afterwards we added balsamic vinegar to the left over in the skillet to top the pork chop and spinkled on the chives (garlic breaded was store bought and added as a side)

Whole meal together


That was our adventure. I know it was a long journey but I hope you all enjoyed it.


Rating time!!
My rating: The Pork Chop was sweet and juicy. The added sauce made with the balsamic vinegar was fantastic. The soup tasted just like potato soup with alot of flavor. Great all around meal
Girls Rating: 3/3 loved it. My youngest and oldest ate the pork chop so fast I was surprised (yes my meat hating kids gobbled it up). My middle child took awhile to eat the pork chop but she finished it. All of them put their soup in a cup and drank it up.

I hope you all enjoyed my comeback blog. I'm planning on going back to doing it once a week again and maybe more as life goes on.
